Starch Mogul Process
The starch mogul depositing process is a candy manufacturing method in which a liquid candy mixture is placed into pre-shaped cavities in a tray filled with native starch. The starch acts as a mold, allowing the candy to take shape as it sets. Once hardened, the candies can be easily removed from the starch. This technique is frequently used for creating gummy candies, edibles and vitamins, providing the flexibility to alter product shapes by simply changing the mold in the starch tray.
